There’s nothing like a good, hearty soup at the end of a long day during a camping trip.
If you’re anything like Michael and I when we head off camping for a weekend, we fill our day to the brim with outdoor activities like: hiking, mountain biking, rock climbing... basically as much fun as we can into the day!
Then when we finally make it back to camp, we’re STARVING (sometimes even borderline hangry, if you know what I mean). So, the first thing on our mind is getting dinner started and filling our bellies with something hearty and delicious and full of protein for recovery.
This Sweet Potato Goan Coconut Turkey Soup is the BEST remedy to a long, active day in the outdoors. It’s filling, it’s full of flavor, and it’s easy to make and let simmer while you set up camp and kick back with a couple of your favorite beverages while it cooks.

ONE-POT SWEET POTATO GOAN COCONUT TURKEY SOUP
Soups are one of Michael and I’s go-to recipes for camping and traveling around in our campervan because of how easy they are to make and how filling they can be.
Soup is comfort food to us, which is why we love this recipe so much!
WHY WE LOVE THIS SWEET POTATO GOAN COCONUT TURKEY SOUP RECIPE
In case you need more convincing, here’s why we love this Sweet Potato Goan Coconut Turkey Soup which features the Maya Kaimal Goan Coconut Simmer Sauce.
This soup is hearty and filling. The perfect comfort food recipe for the end of a long and active day in the outdoors
This soup is packed with protein so that you can get the recovery your body needs to repair your tired muscles after a long day.
This recipe requires only one pot to cook in. We love that! Plus, it makes clean up SO much easier at camp.
Using the Goan Coconut Simmer Sauce in this soup adds a depth of flavor that would be hard to achieve unless you brought a giant stash of spices, herbs, and ingredients with you (and who wants to do that on a camping trip!). This keeps things easy but leaves you with a rich and flavorful soup.
This recipe is healthy! It’s full of all kinds of nutrients your body needs to thrive like sweet potatoes, black beans, garlic, and jalapenos.
And like with all Maya Kaimal Food products, you can feel really great eating this recipe because their products are Non-GMO, USDA certified organic, Kosher certified, gluten-free, and vegetarian (some are vegan).
You can stir fry them with veggies, put them into soups, spread them on a pizza, and even use them to make some DELICIOUS nachos (you can find that recipe here), but let’s get back to the soup recipe.
EQUIPMENT NEEDED
You’re going to need to make sure and pack a few items into your car for this, but if you’re already headed out on a camping trip for the weekend, you might already have most of these items packed up anyways.
1) A camp stove + fuel – We used our 2-burner Coleman Fold N Go Propane Stove and fuel for this recipe, but really you only need a 1-burner stove since this is a one-pot recipe.
2) A cutting board and knife – To cut up the veggies used in this soup.
3) A medium/large soup pot – To cook the soup in. I like to use a big Imusa Caldera for our soups.
4) A large spoon – To stir and serve the soup.
5) A can opener – To open up the can of beans.
6) Eating utensils – You’ll want a bowl for each person and some spoons.
And that’s pretty much it!
SWEET POTATO GOAN COCONUT TURKEY SOUP – RECIPE
So, let’s dive into this hearty, one-pot soup recipe.

Serving Size: Serves 4 people
Prep & Cook Time: About 1-hour total
It’s nice to let this soup simmer for a while so the sweet potatoes get nice and tender, so we recommend getting it on the stove about an hour before you’re ready to eat. The nice thing though is that it doesn’t require much tending to once you get it started.
1) 1 jar of Maya Kaimal Goan Coconut Simmer Sauce
2) 1 yellow onion, chopped
3) 1 lbs. ground turkey (we used 93% lean)
4) 1 medium to large sized sweet potato, chopped into small cubes (I left the peel on because I am lazy)
5) 3 cloves garlic
6) 1-2 cups of broth (just eyeball this based on how “liquidy” you want your soup. If you’d like a more “stew-like soup,” consider adding less broth)
7) 1 14-oz can of black beans
8) 1 jalapeno pepper diced (or 2 if you like things a bit spicier, or none if you dislike spicy things)
You’ll also probably want some toppings. We topped our soup with avocado, shredded cheddar cheese, a little bit of sour cream, and cilantro.
Other topping ideas: red onion, green onion, tortilla chips, a little sweet corn... toppings are so versatile for this soup. It makes it really fun.
Other cooking basics: 1 tablespoon oil (like grapeseed oil or coconut oil), salt (to taste), pepper (to taste)
Directions:
First, start off by prepping your veggies for the soup. Chop up the yellow onion, the sweet potato, the garlic cloves, and the jalapeno pepper, and then set them aside. These things are best chopped fresh, so I don’t recommend doing this in advance of your camping trip.
Next, in a medium/large soup pot, heat up your cooking oil over medium heat and sauté the onions, garlic, and jalapeno pepper until they are soft (about 4 minutes).
Then add in the ground turkey and cook until it is browned and cooked through.
Next, you’ll add in the Maya Kaimal Goan Coconut Simmer Sauce and the black beans and stir to combine.
Then add in the broth. Remember: add in more or less depending on the consistency you want your soup to be. If you want it more “stew-like” then add less broth.
Finally, add in your chopped sweet potatoes, and stir the soup mixture really well. Bring the soup mixture to a boil, and then reduce to a simmer on medium-low heat (or as best as you can using a camp stove).
Cover the soup with a lid and let it simmer for 30 minutes to 45 minutes until the sweet potatoes are tender.
We found this recipe would easily feed 4 people with nice hearty serving of soup each.
